Bruce
Bogartz is a 1989 graduate from the Philadelphia Culinary School. Since
then, he has put his passion for creating delicious food to work whether
he is preparing a dinner for friends or a banquet for a 1000. He has worked
as an executive chef for Warner Bros. and his food has received critical
acclaim from Southern Living Magazine, The James Beard Foundation, AAA,
the Knoxville News Sentinel, Metro Pulse, "Knoxville" magazine,
and KnoxvilleBusiness.com.
Jay
Chia is a 20 year Knoxville resident with a background in Asian cuisine.
Jay is the sous chef that supports Bruce in his creative process. Together,
they make a "good-balancing act."
Bruce and partner, Jay Chia, opened RouXbarb in February 2008. All dishes
are homemade down to the soups, the stocks, and the desserts. "We
offer quality food with Down Home Goodness that honors the cooking styles
